Whiskey Discourse C

Waitsburg Bourbon finished in Cabernet Sauvignon barrels

Introducing our Whiskey Discourse series in June 2015 with the limited release of our 93-point, gold medal (SF International Spirits Competition) Waitsburg Bourbon Whiskey finished for an additional 9 months in 60-gallon French oak barrels from a 100-point Washington Cabernet Sauvignon producer. Whiskey Discourse C starts with OOLA’s signature Waitsburg Bourbon mash bill containing corn, rye, malted barley, and wheat. This beautiful whiskey is aged for 4 years in new American oak before being transferred and finished in used french oak Cabernet Sauvignon barrels for 9 additional months.

“The conversation between French and American Oak Barrels is what we are exploring here. I hope you find this influential barrel discourse as fascinating and profound as I did—but mainly, it’s just a damn fine Whiskey. Enjoy!”
-Kirby Kallas-Lewis, Founder/Head Distiller.

Discourse C is back November 28, 2017 at the distillery.

Reviews & Accolades

  • Highly Recommended

Bright, toasty, creamy aromas of caramelized fruits, toffee, and spiced nuts with a silky, vibrant, fruity medium-to-full body and a warming, complex, long brown spices, crème brûlée, roasted nuts, and minerals finish. A superb straight whisky with great vibrancy and depth of flavor.
