BALSAMIC FIG ROSEMARY FLIP

1 carton Ripe Figs
2 oz. OOLA Rosemary Vodka
1/2 oz. Egg White
2 Tbsp. Balsamic Vinegar
2 Tbsp. Honey
1 Tbsp. Brown sugar
3 one-inch strips Fresh lemon zest

step 1: roast figs
In a shallow baking dish, toss figs with balsamic vinegar, honey, brown sugar, and lemon zest. Turn the figs so that they are all cut side down in the baking dish, in a single layer. Cover the baking dish with foil and bake for 15-20 minutes at 400°F. When done, remove the dish from oven, lift off the foil, and let the figs cool completely.

step 2: make cocktail
Muddle two figs with a teaspoon of the balsamic liquid along with 2 oz. Rosemary Vodka. Dry shake egg whites separately for 30 seconds. Then shake egg whites with the muddled figs and Vodka. Fine strain into a cocktail glass. Garnish with a rosemary sprig.
