Pan-Seared Scallops with CITRUS VODKA and Tarragon Butter Sauce

Pan-Seared Scallops with CITRUS VODKA and Tarragon Butter Sauce 🍴:⠀⠀

1 pound sea scallops⠀⠀
1/2 cup OOLA Citrus Vodka⠀⠀
7 Tbsp. unsalted butter, cut into tablespoons, divided⠀⠀
2 Tbsp. finely chopped shallot⠀⠀
1 Tbsp. finely chopped fresh tarragon leaves⠀⠀
Lemon to serve⠀⠀

Pat scallops dry and season with salt and pepper. ⠀⠀
⠀⠀
Heat 1 tablespoon butter in a 12-inch nonstick skillet over medium-high heat until foam subsides, then sear scallops, turning once, until golden brown and just cooked through, about 5 minutes total. Transfer to a platter.⠀⠀

Remove skillet from heat and deglaze with Citrus Vodka. Return skillet to heat, add shallot scraping up brown bits, until reduced to about 1/4 cup. Reduce heat to low and add 3 tablespoons butter, stirring until almost melted, then add remaining 3 tablespoons butter and swirl until incorporated and sauce has a creamy consistency. Stir in tarragon and salt to taste; pour sauce over scallops. Serve with a squeeze of lemon. 🍋⠀⠀

Serve with bread as an hors d’oeuvre or over pasta as a main course. Serves 4 as an hors d'oeuvre, serves 2 as a main dish.
