La Marseillaise

1.5 oz. OOLA Rosemary Vodka
.75 oz. Fresh lemon juice⠀
.5 oz. Fennel syrup*⠀
Top with rosé sparkling wine⠀

Combine Rosemary Vodka, fennel syrup, and lemon juice in a cocktail shaker filled with ice. Shake until well chilled and strain into a glass. Top with rosé sparkling wine. Enjoy!⠀

*To make fennel simple syrup:⠀
In a small saucepan, combine 1 cup sugar, 1 cup water, and 2 Tablespoons of fennel seeds. Bring mixture to a boil over medium heat and cook, stirring occasionally, until mixture begins to thicken, about 5 minutes. Remove from heat, cover and let stand for 20 minutes. Pour the fennel syrup through a fine strainer and let cool until room temperature, about 30 minutes. Syrup will keep, airtight, in the refrigerator for up to 1 month.
